Commonly called Canadian Bacon, this cut is well marbled and full of flavor. It’s also the perfect size for an English muffin, biscuit, or croissant. 
Try it as a burger topping, one of my favorites is for a Hawaiian burger as it is flavor similar to ham that crisps well.
